Imagine taking a pin and dropping it on the map to see where you will move to next... Takes a strong sense of adventure, devil-may-dare and trust in the universe! That's what the Brook family did decades ago and the pin landed on the Northern Rivers NSW. How lucky are we they did that!
They purchased a ramshackle dairy farm in the Byron Bay hinterland & decided to regenerate a subtropical rainforest that thrives today. From a barren landscape overrun with lantana and weeds, to a haven for native wildlife and botanicals – what a journey!
This was the backdrop for young Eddie Brook as he grew up - regenerating rainforest on his family farm in the hinterland of Byron Bay, where Cape Byron Distillery now lies and fuelling a passion for native Australian rainforest fruits and flavours. Eddie calls his back yard the ideal pantry to source incredible native botanicals and create unique flavours in gin.
With more than 10 years of experience in the spirit industry and 15 years in the food industry, Eddie is well versed in the art of distillation and mentored by Jim McEwan.
For anyone who loves whisky, Jim McEwan, ‘The Cask Whisperer’, is known as a bit of a rock star - the Bruce Springsteen of the whisky industry, a true artisan and craftsman. On one of his whiskey tours to Australia, Eddie invited him to the family farm and glorious regenerated rainforest. The rest is history as they say. The spirit in Jim was ignited - and he found a willing & passionate partner in Eddie - Cape Byron Distillery was born in 2016.
