We love that two fine-dining chefs, one from a hatted restaurant, have been quietly making their mark in the Northern Rivers. And they are a part of our Naturally Northern Rivers Australia tribe of artisans! Ashlee & Matt made a conscious life-changing move to live & breathe their core values – to nourish & nurture the earth as well as those who love their food creations & bring to life “paddock to plate”.
No strangers to a challenge, the pair bought a pecan farm in the pristine Eltham Valley with a majestic orchard of 300 pecan trees, ample pastures for their free-range chickens & pigs, a vegetable garden & sweet-scented native flora for their honeybees. They follow organic farming principles, ethical and sustainable farming practices to manage their pecan orchard biologically, without pesticides. Focusing on natural fertilisation & soil management, they also allow for bush regeneration, with leftovers from biannual pecan harvests fed to their happy pigs. To ensure they have fresh pastures to forage, they rotate their animals regularly. Harnessing solar power, Matt and Ash’s ultimate aim is to for the farm to become carbon positive.
From their farmhouse kitchen, Matt and Ash create recipes using their home-grown pecans and local produce. They want their foodie fans to taste the quality of ingredients and dollops of love they add to their scrumptious paddock to plate products. We are excited for you to try all their creations, especially Lilly's ultimate favourite – Matt’s lovingly baked Pecan Pies – individual sized so you can serve up for yourself or impress at a dinner party!
